COTEAUX de SAUMUR 2000

First of all, we do not produce a sweet wine every year.
To produce such a wine, very particular conditions are
required:
Not too hot in the summer to maintain a good acidity,
Good weather in September and October,
A few rain drops for the botrytis in early November and
then a windy and dry November before the picking.
Picked by hand after a very rigorous selection and if
we can we harvest before the starlings arrive !

| VINIFICATION |
No chaptalisation, no osmosis or any technical or artificial
process is employed.
With natural yeast, the vinification and the fermentation
is done in old barrels and can last a year.
