Jurassic soil only, to keep a good acidity even with a good maturity.
VINIFICATION
Harvested by hand, the grapes are destemmed and lightly marinated before pressing. Fermentation in stainless steel vats with natural yeast only. No chaptalisation, low alcohol degrees.
No maturation, early bottling.
