THE GRAPE VARIETY
Cabernet Franc 100%
vines 25 to 50 years old.
Yield around 40 hl per hectare
THE SOIL
A blending of two parcels on limestone. (turonien)
VINIFICATION
Harvest extremely sound, selection of the ripest grapes, very slow pressing. Fermentation with natural yeast in oak vats for part of the crop. Long maceration, minimum 30 days.
No filtration.
Ready to be sold after 18 months in the bottle, matured in our cellar.
WHY « 253 » ?

Since 1975, the winemakers of our village LE PUY NOTRE DAME have been striving for a village appellation “SAUMUR PUY NOTRE DAME”
We have used the administration number of this village “253”
We are now allowed to use this NEW appellation for the vintage 2006.
